Traditional soy sauce and miso made with 100 years of craftsmanship

This naturally brewed soy sauce is aged for two years using a traditional method passed down for 125 years. Surviving the natural temperature changes of spring, summer, fall, and winter, and avoiding summer twice, when microorganisms are most likely to grow, results in the development of over 300 aromatic compounds and a deep flavor. Our miso range includes "rice miso," made with organic soybeans and carefully selected ingredients, with a gentle sweetness; "ten-grain miso," rich in nutrients and rich in flavor; and "quinoa miso," which is also suitable for those with grain allergies. Tradition/History

A hundred years of tradition and passion in every drop.Currently, Saga Prefecture is the only brewery in Japan that continues to produce traditional soy sauce by artisanal handicrafts, and Maruhide Soy Sauce has continued to preserve the same production methods handed down over 125 years since its founding in 1901. Even now, as times change and science and technology allow for mass production of much soy sauce by machine, the brewery remains committed to listening to the voice of the koji and making soy sauce by hand, harnessing the power of nature. Every drop embodies the pride and artisanal spirit that supports Japan's food culture.

The charm of the creator

For over a hundred years, people have lived with koji. The artisans at Maruhide Soy Sauce meticulously perform each step, carefully monitoring the moisture content, temperature, and even climate of the koji mold thriving in their brewery, without missing even the slightest change. Their tactile senses are the source of rich flavor and mellow aroma. Believing in the power of nature, flavors mature over time—a flavor that machines can never replicate. Soy sauce and miso cultivated in a century-old brewery maximize the potential of the ingredients, further enhancing the flavor of dishes. *Koji is made by steaming grains and cultivating koji mold. Koji mold is a healthy fungus that produces enzymes that break down food and helps our bodies absorb the nutrients in grains.

  • Soy sauce

    Boiling, grilling, pouring, and mixing. Soy sauce is a versatile ingredient that complements any dish. It can be used in a variety of ways, such as as a vinegar dressing for raw vegetables or tomato mozzarella, in teriyaki chicken, or in butter and soy sauce pasta. If you want to enjoy the aroma of the ingredients, we recommend simply pouring it over avocado or tofu.

  • Miso

    Just a spoonful of miso can add a deep richness to stews such as beef stew, cream stews, and ratatouille.

  • Three types of miso

    We especially recommend using rice miso and ten-grain miso in miso soup, and quinoa miso as a dipping sauce for vegetables. Each miso adds a different touch to your daily meals.
